Crepes or Pancakes? Either way We Love Them and They are Gluten Free!

Our new Saturday morning favorite comes from France. It's a Crepe (kinda) :)
I learned that Crepes are traditionally made with whole wheat flour so of course we had to change that but if you try these I don't think you'll be disappointed! Payne absolutely loves these but we had to restrict them to Saturday mornings only cause let's be honest, they don't exactly give the nutritional boost school requires. What they lack in health the make up for in yummy!

Like most moms, I want to expose my kids to many different kinds of foods so they can be nutritionally well rounded adults. Fish is a tricky one for little kids sometimes because it 'smells funny' and looks 'different'. We started our kids out on the - GF Braised Hawaiian Pork? Yes Please!

Ingredients
1 cup Bob's Red Mill All Purpose Gluten Free Flour
1 egg
1 tbls Gluten Free Baking Powder
1/2 cup Vanilla Rice Milk (more as needed)
Dash cinnamon (optional)
Directions
Heat skillet oven med high heat until it's good and hot
Mix ingredients in a bowl, adding more Rice milk if necessary to make a thin, soupy batter
Pour 1/4 cup batter into pan. Rotate pan slightly to make batter spread evenly
Cook about 1 1/2 min per side and your done!
What's your favorite Filling?
There are many things you can put in a crepe! It can be enjoyed for breakfast, lunch, or dinner all depending on what you choose to stuff it with. Payne's favorite thing to roll in his Crepe is a tablespoon of Organic Agave Nectar. It works a lot like syrup but it's much sweeter so a little goes a long way.
We recently discovered Rice Whip by Soyatoo so I'm sure it won't be long until Payne wants to load his crepes with this too. It's very similar to Redi Whip except it's no where near as sweet. That works out fine for Payne though since he doesn't eat much sweet stuff anyway. (doesn't notice the difference) :)
