It's important for kids to have breakfast every day, but what they eat in the morning is crucial too. Choosing breakfast foods that are rich in whole grains, fiber, and protein while low in added sugar may boost kids' attention span, concentration, and memory — which they need to learn in school.
Research also has shown that kids who eat breakfast get fiber, calcium, and other important nutrients. They also tend to keep their weight under control, have lower blood cholesterol levels and fewer absences from school, and make fewer trips to the school nurse with stomach complaints related to hunger.
What not to serve for breakfast is important too. Sure, toaster pastries and some breakfast bars are portable, easy, and appealing to kids. But many have no more nutritional value than a candy bar and are high in sugar and calories. Read the nutrition labels carefully before you toss these breakfast bars and pastries into your shopping cart.
And don't forget how important your good example is. Let your kids see you making time to enjoy breakfast every day. Even if you just wash down some whole-wheat toast and a banana with a glass of juice or milk, you're showing how important it is to face the day only after refueling your brain and body with a healthy morning meal.

I'm sure the above information isn't new to anyone but knowing your kids need a healthy Breakfast and getting them to eat one on a regular basis is two different things! :)
We have three kids at home with three different school schedules and three different sets of taste buds. I have one goal which is to get them all to eat a healthy breakfast so they can focus and learn.
I included the kids in the proccess of finding a Breakfast solution that made us all happy and we came up with two awesome Protein Cookies! The kids will also grab these for an afterschool snack with a quick piece of fruit whether they are on the run to practice or digging into their homework.

Protein Oatmeal Breakfast Cookie
Ingredients
1 Cup GF Old Fashioned Oatmeal
½ Cup Unsweetened Applesauce
1 Egg
1 tsp Pure Vanilla Extract
2 Scoops Vanilla Soy Protein Powder
6 tbls Honey
2 tbsp Natural Crunchy Peanut Butter
½ Cup Raisins
Directions
Preheat oven to 350 degrees
Mix all ingredients together
Drop 5 large spoonful’s onto a lined cookie sheet
Bake for 15 min. Edges should begin to brown

Ingredients
1 cup Smart Balance Natural Creamy Peanut Butter
2 eggs
2 tsp Pure Vanilla
2 Scoops GF Vanilla Protein Powder
½ cup unsweetened coconut
¼ cup pure honey
Directions
Preheat oven to 350 degrees
Mix all ingredients in medium bowl
Drop 5 large spoonful’s on to lined baking sheet and press down with hand to shape
Bake for 11 min or until edges are starting to brown
